Chef John Folse has been in the catering business for more than 30 years. During that time he and his team of chefs have taken Louisiana cuisine down the street and around the world. Locally, we have a host of venues from which we cater most frequently as listed below. Internationally, we have served Louisiana’s indigenous cuisine in Japan, Beijing, Hong Kong, London, Bogota, Taipei and Seoul. In 1988, Folse made international headlines with the opening of “Lafitte’s Landing East” in Moscow during the Presidential Summit between Ronald Reagan and Mikhail Gorbachev. In 1989, he was the first non-Italian chef to cater a Vatican State Dinner in Rome. In 2010, he catered a crawfish boil for the American Ambassador in Helsinki, Finland, to celebrate the Fourth of July.
